I quickly figured out a current favorite whole-foods dessert/decadent-tasting meal: pumpkin pie oats, in the form of pancakes and baked oatmeal! I need to phase out the chocolate chips though…

Exercise: ran 2 miles and walked 2.5 miles

Breakfast:

  • Pumpkin chocolate chip oat pancakes (1c oats)
  • Coldbrew coffee with soymilk

Lunch:

  • Kale salad mix with 300g red potato,1/2 avocado, 2 tbsp pumpkin seeds, 4 tbsp cranberries

Dinner:

  • 2 big carrots, roasted
  • Boca vegan burger
  • Baked pumpkin pie chocolate chip oatmeal (3/4c oats)
