I’m excited to get back to sharing my food with you all! Today was the first day of my little Starch Solution challenge (which really isn’t much of a challenge), and it felt great to get back to eating more whole foods. Although, I ended up being stuck on campus for longer than I’d planned and had my emergency protein bar. I think I’ll make some protein bars of my own with less processed stuff in them to take to campus once I get some time!

I also realized I went a bit overboard on the dates for a Starch Solution-based diet… dried fruit is one of the things that it explicitly says is not a great choice. 😛

Also, I was even more HCLF than my goal, because I managed to get 80% carbs!


Macros: 80% carbs, 14% protein, 6% fat

Exercise: walked 5 miles

Breakfast

  • Banana sticky rice pudding with cinnamon
  • 2 dates

  • Baked russet potato, baked yukon gold potato, and chick’n ranch salad
  • Blueberry smoothie

  • 2 dates

Snacks

  • Peanut butter protein bar
  • Mashed sweet potato

Calories: ~1900  |  Protein: 74g  |  Fiber: 59g
