December 26th Food Diary

Calories: 1775

I spent most of the day being upset about my friend’s death, and didn’t start eating til around 3… but I still managed to compensate by eating ridiculous amounts from 3pm to 2am. I went to my favorite vegan restaurant for dinner with my brother, sister in law, boyfriend, family friend, and one of our teachers from high school (my brother, boyfriend and I all graduated from there). And another teacher from my high school happened to be there at the same time… this isn’t a small town. Population is over 3 million. And yet there were two math teachers from my high school in the same vegan restaurant, nowhere near said high school. Their classrooms are literally right next to each other too. Freaky!

Anyways. I ate way too much, and then ate even more around midnight because we were up late and I was falling asleep. And of course I chose almond butter to wake me up… sigh.

The good news for the day is that I came up with a french fry replacement: a plate of sauteed potato spirals for 50 cals. Yum! It was the first time using the spiralizer my brother and sister in law so kindly got me for Christmas… I’m in love!  And they got me lifting gloves, and a running jacket… the fact that they seem to take my desire for fitness seriously means a lot to me.

  • Vegan drumsticks, mongolian “beef” with brown rice, sushi: 800

Snacks:

  • Almond butter, dried blueberries, dates:395

Net: 1660

Protein: 84g
