Highlight of my day: made seitan from scratch for the first time! I went with seitan “chicken” nuggets and they were fantastic. The best fake meat I’ve ever had… Seriously lifechanging. And only about 20 minutes to make, with 5 minutes of prep

Too bad it’s made of gluten. So I guess it’ll have to be more of an occasional treat than a staple! And yet, seitan has one of the highest protein to cal ratios I’ve ever seen…

Breakfast:

  • Tea, coffee: 95

Lunch:

  • Sweet potato with pecan butter + salad with seitan nuggets (3 hours apart): 390

Dinner:

  • Spicy green bean curry with seitan + chocolate avocado mousse: 405

Snacks:

  • Rice cake + pecan butter: 150

Total: 1040  |      Exercise: 45

Net: 995

Protein: 60g
